Why is this honey white?
High-altitude nectars and fast fine crystallisation set naturally pale honey into a creamy, almost white paste. Nothing is added or whipped — that is simply how alpine honey behaves.
Is creamy/crystallised honey still raw?
Yes — crystallisation is the surest sign of raw, unheated honey. Commercial honey stays permanently liquid because heating destroys what would crystallise.
How should I eat it?
Cold, by the spoon, or spread on bread. Avoid stirring it into hot drinks — the texture and the enzymes are the whole point.
